Don’t Waste: Saving old fruit from the bin

In line with our deep rooted belief that waste is one of the biggest destroyers of our planet, Keith and I do all we can to save and not waste.


Today I noted the "whoopsie" strawberries I picked up at the supermarket were getting a little soft and squishy. So before they mold and start to taste earthy I topped and tailed, tossed them in a pan (50:50 fruit to sugar - though I use a little less sugar) added some sugar, a grape to get the pectins which will make it set and brought it to a rolling boil for around 5 to 10minutes.


It should become visibly thicker, or test it's set-ability on a plate.


Once happy, I let it cool a little and transfer to a jar. It's never going to be "set" like a supermarket jam because you aren't using the chemicals they do to make it appear "just right" but it will taste so amazing you won't regret it.
